Astragalus & Bone broth soup
My go to Spring immune strengthening recipe that supports the body against seasonal allergies and builds a bridge to Summer.

We are gradually and tentatively transitioning into summer, it is important that we continue consuming warming, grounding and nurturing foods. We must gently introduce lighter, cooling foods allowing the body to sync and synergise with the changing seasons…
Ingredients
4-5 slices dried astragalus root
2 large Tbsp toasted Nori
4-5 dried shiitake mushrooms
1/2 Tsp tamarind paste
1 bunch organic watercress
5 Tbsp fresh organic chicken bone broth (recipe
2 Tbsp ginger fermented with lime
1 Tbsp grated fresh ginger
Finely chopped spring onions
Lime zest (from an organic lime)
Method
Pan 1
Add the chopped astragalus, 2 tbsp of nori and tamarind paste to around 750ml of filtered water in a pan
Cover pan and allow to simmer for 30 minutes.
Add bone broth and let simmer for another 8-10 mins
Pan 2
In a separate pan, sauté the sliced shiitake mushrooms and watercress
Squeeze the ginger juice onto the sautéed mushrooms and watercress
Add these to the first pan
Garnish with fermented ginger, finely chopped green onions and lemon zest.
Serve and enjoy the warming and grounding taste.

The bone broth, astragalus and shiitake are immunity boosters.
The fermented ginger enhances digestion
The tamarind supports colon cleansing and detoxification.
The star ingredient in my opinion, is the tamarind. The sour taste of tamarind provides cleansing and prepares the senses for warmer weather.
